Brandon & Caitlin Schewe, who met through the local restaurant scene, have called Downtown Bonita Springs home for 12 years. They have witnessed and believed in the area’s growth from the very beginning, seeing the potential outlined in the city’s slogan of a "big bright future." In 2017, Bonita Springs invested millions into its downtown area, leading to a steady influx of new businesses.
The first major success story was Downtown Coffee & Wine Company, which paved the way for other establishments. Following their success, the Schewes opened The Bohemian in Entrada Plaza, a trendy tapas spot known for its eclectic interior and sophisticated menu. The Bohemian introduced a chic vibe to Old 41 Road, solidifying the area’s transformation.
Now, the Schewes are introducing another exciting concept: Canary Club Pizza & Cocktails. This new establishment will feature gourmet wood-fired pizzas, tapas, and cocktails with a Mediterranean and Middle Eastern twist. True to the Schewes' commitment to quality, the Canary Club menu will emphasize premium ingredients and techniques, with all pizzas featuring a sourdough crust and finished in a genuine wood-fired oven—a rarity in Southwest Florida.
While the menu is still being finalized, here’s an exclusive preview of some tantalizing dishes from Chef Brandon Schewe’s culinary vision:

While Brandon finalizes the menu, Caitlin, with her interior design expertise, is crafting an inviting space. The vision for Canary Club includes rattan furniture, warm tones, oriental rugs, and lush foliage. The interior will offer diverse seating options, including a 14-person bar, while a paver patio will cater to outdoor dining enthusiasts. Caitlin also plans to create private seating areas with large planters to provide an intimate dining experience.
Canary Club is under construction at the northernmost commercial unit at Waterline along Old 41 Road, next to the soon-to-be Sauna House. With only two units left in the previously vacant commercial space, these are expected to be leased soon.
Stay tuned for the grand opening of Canary Club Pizza & Cocktails, where the Schewes will once again elevate the dining experience in Downtown Bonita Springs.
